Coquo Restaurant and Wine Bar celebrates Mother’s Day with a special menu

Well-known poet Rumi once said, “We are
born of love, Love is our mother.” A
mother’s love for her children is genuine and boundless, no matter how old her
children are. Taking on many roles after being bestowed the title of mother, a
mom goes beyond her responsibility to keep her offspring happy and well-fed. For
some children, learning to cook mom’s dishes becomes a catalyst to pursue a culinary
career - like it did with Chef Toni Valero, co-founder of Coquo Restaurant and
Wine Bar.
Hailing from Barcelona, Spain, the chef
has been in Malaysia for four years, initially sharing his country’s delicacies
at Ohla Tapas and Cocktails at The Intermark. Last year, Chef Toni ventured
into new cuisine territory together with food-aficionado Tricia Kandiah to
bring modern cuisine to the Malaysian public with Coquo Restaurant and Wine Bar,
at Solaris Dutamas.
“At Coque, we want to give Malaysians
the opportunity to experience and enjoy modern cuisine created from quality
local and international produce, infused with international flavours and
cultures,” --- Tricia.
In conjunction with Mother’s Day, which
falls on 14 May 2017, the restaurant presents a home cooked, culturally rich
menu with two dishes Chef Toni learnt from his mom - Gazpacho with Grilled
Lobster and Cured Egg Yolk and Pork Rib & Crab Rice.
“Mum used to make gazpacho for dinner
during the hot summer seasons in Spain, because it is a refreshing dish that is
rich in proteins. I also loved waking up to the aroma of Pork Rib and Crab rice,
which mom used to make every Sunday. I
am excited to share my mom’s home cooked recipes with everyone in Kuala
Lumpur,” --- Chef Toni.

Egg Yolk (MYR 48++)
Gazpacho with Grilled Lobster and Cured
Egg Yolk is a soup made of made of raw vegetables, mainly tomatoes, and the
dish is served cold. Together with grilled local lobster and cured kampung egg
yolk, this dish originates from Andalusia, south of Spain.
Pork Rib & Crab Rice (MYR 58 ++)
Pork Rib & Crab Rice is a dish with
rice and sofrito (a combination of chopped vegetables like garlic, onion,
capsicum and tomatoes which are cooked over 2 days) and prawn stock.
With the addition of iberico pork ribs and local crabs, the dish combines flavours from both land and sea.
